Molasses a.k.a. Gingerbread Cookies

When I get in the mood to cook these cookies, I end up baking batch after batch until the kids finally say no more! Each batch makes about 8 or so dozen cookies and they never last more than 2 or 3 days! I’m not a bragging person but I end up making them for others and each year I am asked to make them for parties, individuals and also shipping them off to others in different states! They are just moist and delicious if I do say so myself! I have only given the recipe to a few people and nope I will not put it on here, sorry! But here is the process!

You really thought I would do all of this and NOT give the recipe? Really? Well I can give away what I actually found on the internet! So here it is!

Preheat oven to 350 degrees

In Large Bowl mix ALL dry ingredients:

5 ½ cups flour
4 teaspoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons baking soda
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon salt

In medium saucepan combine the following until melted (continuously stir so that the mixture will not burn).

3 sticks of butter (1 ½ cups)
1 cup of molasses
1 cup of sugar

Once the mixture is completely melted pour liquid into large mixing bowl into the dry ingredients and mix WELL; once mixed stir in 2 eggs, ONE AT A TIME.

Wait about 20-30 min before chilling and chill for at least an hour. I chill mine between 1-2 days.

Once chilled, scoop out with a cookie scoop; roll into smooth balls and then with your index knuckle indent the middle of the ball and place on the cookie sheet. Bake for 12 minutes.

  1. Wow! This looks wonderful! My grandmother used to make something similar, but the recipe was lost. Waaah. I think I'll try these this year and use them as a starting point.

Thanks for sharing these great ideas!
